Hotel Management as a Career
The hospitality sector, as the predominant area of the Tourism Industry, has really taken off in India and there is really a boom going on in this industry. The hotel industry is growing at a rate of 20% per year and the additional human resource requirement of the industry was over 70, 000 by the year 2001. To keep pace with the unprecedented growth, the additional room requirement by the end of the year 2002 was around 65, 000 which means a phenomenal growth.
To keep pace with this unparalleled growth, the human resource requirement is also increasing. The liberalization policy of the Government has enhanced the pace of economic activities and given a boost to the national and international hotel chains to construct and provide more room capacities with better facilities in hotels in our country. The basic qualification required to apply for a course in Hotel Management is 10+2. The selection process varies from institute to institute but generally a written test followed by a group discussion and a personal interview is the practice.
Where to Study : The National Council for Hotel Management and Catering Technology ( NCHM ) was set up in 1982 with a board of Governors comprising Government and trade representatives to look after its affairs. The council has been assigned the role of assisting and advising the Government in the coordinated development of training programs in Hotel management and related fields.
Its main concern is directed towards growth and development of the Institutes of Hotel Management and Catering Technology all over the country and to affiliate existing institutes of similar nature. The council conducts courses at Diploma and Post – Diploma levels to develop tomorrow’s top professionals in the hospitality – related enterprises.
The council also prescribes common syllabi for all its courses. It conducts research studies in the field of Hotel and Restaurant Management and awards diplomas and certificates to successful candidates. There are 24 Institutes of Hotel Management and 8 Catering Technology and Applied Nutrition in India. The NCHM has been able to provide uniformity and standardization by introducing a common Examination System and a complete revamp of course content of the 3 Year Diploma Program to suit the requirements of the technological advancements made in the Hotel Industry.
The revised common curricula have been developed with the assistance of UNDP / ILO experts and hotel industry representatives. The industry has welcomed the New Common Examination System for all the three years, which produces a standard quality of students from all the 24 institutes of Hotel Management in the country.
A Joint Entrance Examination ( JEE ) is conducted at various centers all over the country, advertisement for which is published in the last week of January each year. The last date of submission of the completed forms is one month after the advertisement ( generally last week of February ). The written examinations are held normally on the last Sunday of April and Interview is conducted during the 1st and the second week of June every year.
The JEE examines your ability in ( 1 ) Reasoning & Logical Deduction, ( 2 ) Numerical Ability and Scientific Aptitude, ( 3 ) General Knowledge and ( 4 ) English Language. The candidates should have passed 10+2 stage or equivalent examination in any stream with English as a compulsory subject.
Candidates who are appearing in the qualifying examination in the same academic year are also eligible to apply provisionally subject to the condition that they should produce proof of having passed the qualifying examination at the time of interview scheduled for mid June of the year. Age of the candidate should not be more than 22 years as on 1st July, in the year of application. Maximum age is relaxable up to 25 years for SC / ST candidates.
15% are reserved for Scheduled caste and 7.5% for Scheduled Tribes, 3% seats are also reserved for Physically Handicapped. Short listed candidates are called for personal interview. Your academic and personal accomplishments, diversity of background, outside interests and depth of self appraisal and commitment are specially valued. In addition, some notable private institutes are Taj Group’s Institute of Hotel Management at Aurangabad, the Welcome Group Graduate School of Hotel Administration at Manipal, the Oberoi School of Learning and Development ( OSLD, Delhi and Kolkata – based IIAS School of Hotel and Tourism Management.
A number of private colleges in West Bengal like the National School of Hotel management in Durgapur, Durgapur’s Society of Management Sciences, the Institute of Advanced Management and Meridian School of Hotel Management are other good institutes to obtain a degree / diploma from. While choosing the Institute / University for the course, you have to be careful since this is your career decision and you just cannot take chances.
The infrastructure and the resources, both physical and human are very important and so is the library and computing facilities. It is a good idea to get a copy of the ‘faculty list’ along with their credentials as well as a copy of the past placement record of the institute with the organization they are working.
One thing the students must check before taking admission to a Hotel Management Institute is whether it is organized by the AICTE, Government of India. Since there has been a mushrooming of a number of small unrecognized ‘so – called’ institutes who would not offer you anything but a host of false promises. Therefore, you should be extremely careful.
The Course is between three and four years duration for Diploma / Degree Certificates, depending upon the institute. The three – year diploma Course in Hotel Management is a Full – Time Program. In the first year, you will be grounded in the basic skills of Food Production, Food Beverage Service, Front Office Operation, Accommodation Operation, Hotel Maintenance, Nutrition, Communications and Accountancy.
The second year will broaden the perspectives with focus on diverse subjects like Law, Management and Computers. In the final year, the emphasis is given on vital areas like Hotel management, Marketing & Sales and Food & Beverage for early assumption of high – level responsibilities in a rapidly changing business environment.
Besides, you are also given the opportunity to produce in – depth research projects relevant to the hotel industry, which enhances your knowledge, imagination and creativity. If you are a successful student of any of the good institutes of Hotel Management, you have plentiful job opportunities in hotels, restaurants and clubs, food service for airlines, hospitals, armed forces, institutional catering and consultancy firms designing and marketing of institutional equipment and products, hotel marketing and sales, the operation of resorts and college teaching.
You also find careers in railways, shipping and industrial canteens. The course generally includes 22 to 24 weeks of ‘on the job’ Industrial Training in reputed hotels. If your doing training for more than that, you are basically wasting your course time on menials. One more factor that has become either as a program trainee or at the entry – level position. In case of the former, a person has to undergo training for two years before graduating to the position of an Assistant Manager.
In the latter case, the person has to work his / her way up in the organization. And while the experience – based promotions have gone out of fashion, some hotels recruit personnel at the mid / supervisory level. At middle management and supervisory levels you are absorbed in the multifarious areas of hotel operations including Front Office, Hotel & Beverage Services, Food productions or Kitchen, Housekeeping and Marketing & Sales.
All of these are specified areas of operation and require a great deal of study and practical application. Emerging trends in the growth of tourism and the expansion of the accommodation sector have necessitated a substantial increase in the additional requirement for trained manpower. Coupled with this is the requirement for trained manpower demands in special areas such as airline and railway catering, industrial catering, institutional feeding, etc., and has warranted further augmentation of training capability and modernization of existing facilities. For the initiated and the self – motivated people Hotel Management graduates have a future not only in hotels and hospitality but also in the services sector.
They can foray in to PR and corporate communications that have just emerged in the hotel industry. Standard futures of hospitality professional like good social behavior and etiquettes stand them in good stead. You can also start your own business ad become a successful entrepreneur. A career I the hospitality industry can be rewarding and stimulating. Long and irregular hours of duty are more than adequately compensated by attractive pay packages.
You can chose your preference of jobs from the wide range of jobs, which include Food & Beverage, Food production, House keeping, Front office, Marketing, HRD, Finance, etc. The salary structure in the hotels is reasonably good ranging from 5,000 – 6,000 onwards for Management Trainees. Small hotels offer lesser salary but provide accelerated career growth.
