Chef Career Course Institutions in India and Abroad

Since time immemorial, mothers have been cooking various delicacies for their families. There were traditional cooks who prepared mouth - watering food on social occasions such as marriages, etc. But becoming a cook (chef) as a career option has come up only recently, though it has been a pleasant pastime or hobby for some. Cooking these days has stepped out of the confines of the traditional kitchen and become a high flying career as an important adjunct to fine living. The work of a chef today has become rather unconventional and combines passion, creativity and hard work.

If you want to become a chef, you must enroll in a four - year degree or a three - year diploma course after completing your 10+2. These courses are offered by various hotel management institutes across the country under the National Council of Hotel Management and Catering Studies, besides many private hotel management institutes. Various apprenticeship programmes to train chiefs are also offered by the professional culinary institutes and industry associations. Before taking admission, you should check the faculty of the institute and the placement record for the last two years. Secondly, you should also prefer old and established institutes because prospective employers mostly recruit students from such institutes.

While you are still in a management institute, you should try to work at least 4 - 5 hours on a weekly basis or weekends in some hotel / restaurant. This will give you an edge over other students when you are out, seeking a job. Further, you should be very clear and focused from the very beginning about your area of specialisation. Essentially, there are three areas of specialisation which you, as a chef, can take up - Cold kitchen. Hot kitchen and Bakery & Confectionery. The Cold kitchen consists of salads, cold meat, butter sculpture, vegetables, fruit carvings done with hand, etc. Hot kitchen areas include gravies, tandoories, roasting, grilling and sauces. Pastries, cookies, etc., come under Bakery and Confectionery. During the course you should work hard, be around and learn as much as possible because the finer aspects you learn at this stage, generally prove to be of great help in your career.

After completion of your diploma or the certificate course in Hotel Management, you can join a hotel as an intern. Also, you can do apprenticeship after 10+2 directly. Generally, no degree/diploma is required for the beginner's job, if you want to become a chef then you become a chef then you must have one. There are various stages you have one. There are various stages you have to go through before you become a chef. They are : Commi 3, Commi 2, Commi 1, Demi - chef - de - partie, Chef - de - partie, Sous (Deputy) chef, Executive sous chef and Exective chef. You start as Commi 3, after two years become Commi 2 and three years later, if your performance is up to the mark, you become Commi 1. Next higher stages are Demi - chef - departie and Chef -de - partie. As Chef - de- partie and Chef - de - partie. As Chef - de - partie you will be made in - charge of one section, like Chinese, French, Italian, Continental, Banquet, Pastry or Butchery. Sous chef or Deputy Chef is obviously second in command and works directly under the Executive chef.. He is responsible for the performance of everybody in a kitchen. This position brings more prestige and money. The Sous chef's ultimate dream is to become an Executive chef. Executive chef's responsibilities include all the kitchen as well as coordination with other chains of hotel. You also have to be a good production manager, finance manager, personal relations manager and a good human resource manager to succeed as an Executive chef.

A degree or a diploma certificate in Hotel Management and Catering Technology open up many employment avenues which are varied and interesting. The work involved is absorbing and challenging. You may find jobs in hotels/restaurants, air catering, food processing companies, catering in confectioneries, cruise liner, corporate catering, etc. You can also become a food writer. And, of course, you can become a food writer. And, of course, you can become an entrepreneur by setting up your own business. Overall, this is a fantastic career with huge potential. Tourism is on a progressive curve. People are traveling more frequently now and are aware of different types of cuisine. People now have huge disposable incomes and the demand both in terms of quality and quantity has gone up. Earlier there were only three or five star hotels but now we have many economy hotels too. Thus the career of a chef is very promising.

Even though the pay scales may vary from place to place, the differences are not too many. An apprenticeship just after school can earn you Rs.1,000 - 2,000 per month. A Demi - chef - de - partie earns about Rs. 8,000 - 9,000 per month. Sous chefs earn in the range of Rs.50,000 - 60,000. As you reach the top and become the Executive chef, your salary can be anything between Rs. 1 lakh - 2 lakh per month.

Since the career of a chef is not a traditional one, you should be mentally prepared for a lot of hard work. You should be ready to experiment with cuisine and learn new things. As good cooking comes through experience, therefore, a good chef is an eternal apprentice. It is a well - known fact mostly, food habits are culturally determined, you should be adaptable to the changing social order and food habits of people. Besides, as a chef, you must keep abreast of the latest technologies and techniques of cooking. Also, you can't be at many places at the same time. Therefore, you should be ready to delegate work and authority and help in maintaining the team spirit.

Some chefs are household names and earn a lot, but most stay behind the scenes. Therefore, you must choose cooking because you love it, as there is a very slim chance that you will become a celebrity.

It is also offered at Kolkata, Srinagar, Lucknow, Ahmedebad, Goa, ,Mumbai, Chennai, Bangalore, Hyderbad, Patna, Guwahati, Bhubaneswar, Chandigarh, Gurdaspur, Gwalior, Thiruvananthapuram, Meerut and Jaipur. The National Council of Food Technology conducts a joint entrance test in April.

Eligibility is 10+2.

The Welcome Group Graduate School of Hotel Administration, in Manipal, Karnataka, offers a 4 - year degree programme.

The Oberoi Center of Learning and Development, New Delhi, offers 3 - year diploma courses in Hotel Operations Management Training Programme and in Senior Kitchen Training Programme.

The Government Institutes of Hotel Management and Catering at Dehradun and Almora offer a 3 - year diploma course.

The Oriental School of Hotel Management conducts entrance tests for 3 - years diploma course, which are held at Mumbai, Delhi and Vadodara.

The Indian Institute of Hotel Management, Aurangabad also offers a 2 - year diploma in Culinary Arts and Kitchen Administration.
